Big block running hot. Can’t figure out the issue

Ok, so I managed to get some time to work on the truck this weekend. New radiator, hoses, cap, and thermostat all in and the system burped. I noticed during the burping process though, that the t stat (180 degrees) doesn't open until the gauge reads 240ish so I'm thinking maybe my sensor is crap. Have a new one on the way as well as one for the intake just to compare. IR gun showed the exterior of the heads was around 220 degrees too and the upper rad hose never got hard this time so I'm thinking maybe a plugged radiator or bad cap wasn't letting it relieve pressure. I'll report back once I've got the new sensor in just in case.
