Ok, so I managed to get some time to work on the truck this weekend. New radiator, hoses, cap, and thermostat all in and the system burped. I noticed during the burping process though, that the t stat (180 degrees) doesn't open until the gauge reads 240ish so I'm thinking maybe my sensor is crap. Have a new one on the way as well as one for the intake just to compare. IR gun showed the exterior of the heads was around 220 degrees too and the upper rad hose never got hard this time so I'm thinking maybe a plugged radiator or bad cap wasn't letting it relieve pressure. I'll report back once I've got the new sensor in just in case.

Figured I'd close the chapter on this. Swapped in new temp sensors (one in the head and one in the intake) and everything's running good now. Sits at ~170-180 degrees with the head sensor and about 10-20 degrees hotter if I connect the wire to the intake sensor. Still no idea how or why the upper intake hose got hard the first couple of times but everything's good now, just need to fine tune the carb
