Will these work for LED Dash Lights?

I used led strip lights instead of individual that replace the incandescent. The wiring was much simpler and the gauges are well lit without any dark areas.....just another option.

How many will I need to replace all of them in the guage cluster?

I think there are 12 in the gauge cluster of my 78, plus one in the wiper switch.

Just remember they won't dim properly unless you add a PCM circuit to the dash light output.

I used like 6 I think for my gauge cluster and the heat controls.

I used the term PCM (Pulsed Code Modulation) incorrectly. I should have use PWM (Pulse Width Modulation).

Use a unit that can handle at least 25% more amp draw than what your LED's are rated. That'll give you a safety margin from overheating and increase the longevity of your unit and LED's.
Just Google 'LED Dimmer for 12V Automotive lights' or similar and you should be able to find something that suits you.
