Getting rid of the converter MIGHT help with top end, (less back pressure, lower pumping losses), getting rid of EGR will GREATLY help part-throttle performance, re-working your advance curve can give a good boost, but removing the AIR pump won't do much that you can feel, but it will reduce under-hood heat.Had a shop do my 1985 K20 4x4. No big deal to the them.Removed the smog pumps,hoses and plugged the engine and i took that nasty converter off.Really cleaned up and simplified my 350 motor. In my mind i want to say it runs better but other folks will say it does not make a difference. In MD. i had to register it as a 1 ton farm vehicle to be exempt from emissions.
