I have heard two opinions
1. Old OEM after 40 years is still better than new chinese
2. Replace them as the engine is out now.
Its not about money. The new rubber ones available here cost 20-35$. Whats your opinion.

Rubber ages and with 40 years it's pretty dead. I had to replace the engine mounts on all old vehicles I owned. Some were terrible worn some not too bad but still dead. I replace them with polyurethane inserts. I used the Summit brand and they are not much stiffer as the rubber versions.
Polyurethane is very resistant against oil, gas and all that other stuff in the engine bay. My 0.02$.

I used these in the factory metal "clam shells" for my 78 C10 : https://www.summitracing.com/parts/ens-3-1116g/make/chevrolet/model/c10/year/1978

I usually replaced the mounts. Many times upper bracket attached to the block will be laying hard against the cross member or frame. Even if it isn't will the old mount last as long as the replacement engine?

Anyone who has replaced this style mount [engine installed] will attest they are no fun. Much easier to do when engine out.

I think it always pay off to go with new, but spend some time looking for a higher quality product. Maybe the off-road vendors sell some HD engine mounts?

With a C20 you will probably pull the engine and trans as one unit, so reinstallation might be not that difficult. With a K25 like mine you have to pull the just the engine, and then get it lined up again with the transmission as you drop it into place. I think I tried just dropping the engine in and lining up the mounts enough to slip the pivot bolts back in, but I couldn't line up mounts and drop the engine at the same time.

IIRC, I bolted the complete mount to the engine, then dropped the engine in place on the fame and slid it back to meet the bell housing. Then I used the hoist to take enough weight off the engine so I could jockey the front of the engine around until the motor mounts lined up with the holes in the frame. Not much fun, and lots of possibility for pinched fingers.
