Personally I would cut the part above the heater box how I did, all i used was a piece of 1.5" schedule 40 pvc pipe to form it. For the area behind the engine I would first try to spot blast it or some type of rust remover, if holes start to show then replace, if it seems to remain intact then clean good and coat with some type of covering to protect it and make the piece in front of it.
If you do need to replace-
I would cut the bad out and make smaller pieces as opposed to one big piece as it appears you only have 2 major spots. Get yourself a sand bag and some rubber, wood mallets, or plastic hammers and experiment with making curved pieces

Yeah I have the heater box section
That was for converting to heat only then the cowl area almost all the way across to the other side of the engine..
But there’s putting all along the “seam”
I was trying to make cuts that I could form in sections.
I was planning on trying to use rust converter but I’ll cut it out and form new steel.

I weld thicker steel and not the sheet metal crap
But welding is welding I’ll get it done

I can see the backside it all looks good
I have the metal dash removed

green cab has rust on the
Cowl
Floor
Rockers
Back wall
Roof
All around the windshield
Etc

Donor is a 78 firewall had a little rust
While I was fixing that I decided to smooth it out

Green truck also needed a pass fender and inner
So I grabbed a “repo” one
I don’t recommend them in the future
They’re a lot thinner butnitnlines up ok
The donor cab had a banged up metal dash cage so I cut the one out of my green truck to transfer into the new cab
