I bought some new headliner material for my 85 C10. It was gone when I got it. I have it out on a table. My plan is to spray the glue a few inches at a time, starting from one side to other, and lay the material down as I go.

Anyone have a better method?

from what I've seen and done before, the adhesive is sprayed on both surfaces and allowed to set. Then you start by laying it in the center and stretching it out to each side, pressing it down to set it as you go and making sure you don't have air bubbles or wrinkles.

When I did the one in my crew cab, I started in the middle and worked my way out to each side. Also, remove as much as that old foam as possible to get a good bond. I got lucky with mine as I was able to take a stiff brush and remove most of what was left.

Best glue to use? I have one can that says good for headliners (can on the right), the other one doesn't mention headliners.

Looks good.
Which adhesive did you use?
I've used the 3M one mentioned earlier. Seems to be holding well.
