What is the little plastic piece that bolts to the engine and covers the exposed flywheel on either side of the bellhousing? Is it specific to the bellhousing or the engine?

I've always called it a flywheel cover. The one I have is from a '90 Sub and is metal.

Not sure of the name either, Just a dust shield, but I think they are specific to ths transmission. Like Snoots says, some were metal.

Thanks. That got me pointed in the right direction. Inspection cover seems to be the closest thing to an official name I see.
