All the drop spindles I've found for our trucks (I've got a 78 short bed) are 2.5" or 3" drop. I want to go with 15x8 wheels with 275/60/15 tires on all 4 corners, but have been reading that going with 2.5" drop spindles will cause issues with the lower control arm rubbing on the inner rim lip. I figure going with a 2" drop spindle (if there are any out there) would eliminate that issue.

You may be able to run a 2.5" dropped spindle. I run a 2.5" dropped spindle with 1 coil cut from a 6 cylinder spring, 15x8 wheels with 4" backspace.
You will need someone to trim and box the lower A arm(breaking a lower control arm on the freeway is not fun!!! It must be boxed!!!). My upper and lower A arms have also been narrowed 1". I have no trouble rubbing but the largest tire I've run in front was a 255/60/15.
The only issue I had with the rims themselves was knocking off the backside clip weights..Just specify tape weights.
