So far replaced the carb, shocks (the rear ones were original), u joints all ignition tune up, greased everything.
Unfortunately I realized today that I had burned 3 qts of oil in the past 400 miles. I want to put a 350 in it at some point.
Not sure what I want to do with the exterior.
I've gleaned a lot here already.

It sounds like a some rings may be wearing out pretty good. A dry and wet compression test would address that theory. You could also try a new PCV valve. If it has one, it may not have been replaced in a long time. The rattle test is pretty good. If you shake it and the checkball rattles, it's most likely good.

That's alot of oil for 400 miles. Using that much, if it's burning it, I'd think you'd see some blue smoke out the exhaust for sure. What engine is in it now?

Its a 250 6 cylinder. I don't know why there isn't more smoke. It runs pretty crappy too. I'm planning on a compression test sometime, I hope it will keep going till next year at least.
I'm rebuilding my house so resources don't allow me to run out and get a new engine just yet.
