Weird problem sbc spits and sputters till dies then start back up and its fine again

I have a recently rebuilt sbc 350 wild a mild build, I daily drive it now that the project is done but recently about once a week I will be driving and after about 5 mins or less of driving it will spit and and sputter until it does, almost acts like the timing is insanely off but after I I come to a stop and start it back up it’s totally fine again. It’s happened twice now on the highway as soon as I got up to speed in the exact same spot and getting confused as to what it could be, hope someone else has some ideas. Thanks in advance

It is starving for fuel, most likely.

Okay thank you, what do you think my next step should be to fix the problem. I have a fresh carb on it. I just find it weird it only does it every 5-10 times I drive it and then is perfectly fine again after starting back up

What carb? Has the float level been checked? Other culprits can be a restricted fuel filter, a restricted pickup in the tank, or a minor leak in the suction line that is drawing in air.

When you are getting on the highway, you are using more fuel than just driving around, with is likely pushing your weak fuel delivery issue to the point that the engine stalls due to a complete lack of fuel.

When you are getting on the highway, you are using more fuel than just driving around, with is likely pushing your weak fuel delivery issue to the point that the engine stalls due to a complete lack of fuel.
It’s a Holley 650 street warrior, I checked my float level about a month ago and was still good but can check again tonight. Has a relatively new fuel filter. I should add that it has also done this when driving around town going under 60 and when i come to a stop just dies out and once again crank and she will run perfectly for a week after that.

Do you mean a 670 street avenger or truck avenger?

They come with clear sight plugs, but those are only meant for use during tuning. If left in place, they will deteriorate and clog up the fuel bowls with trash.

I'd go though all the tuning again and make sure nothing needs adjustment. Then go from there.

Sorry getting confused with other projects, meant 600cfm. I will definitely do a once over of my float height and mixture screws, should I be checking my accelerator pump too?

Take the gas cap off and try driving it that way. A vacuum in the fuel tank may be the cause.
