What sizes should I be looking to purchase...

IIRC, T10 and T15 will be the ones you'd use the most. Now if you get into body hinge bolts and such, those get up there in the T50+ sizes and I'm not 100% certain on those. But, pretty sure if you have a T10 and T15 that should cover most of what you'll need.

Someone please correct me if I'm wrong. It's been awhile since I needed one. Talilights and Headlight bezels is the only thing I recall using them for.

T50 and T55 are widely used for seat belts on newer stuff that's about all I use thought other then T15-T27 at work all the time. Then there is Ferd bed bolts that are a lil different T50 cause they have a rounded corner instead of a point.
