You'll be happy with either of the cams you showed originally. Good low end and mid range. I have installed two cams with 600/800 to 4600 rpm range and have liked both of them. If you have vortec heads go with the lower lift cam. I swapped in vortec heads but didn't do the cam, and noticed a big difference. Later on I removed the engine to reseal it, clean it, etc. I had the cam kit on a shelf so I swapped it in. The cam was an old school grind, the 300hp/327ci cam, and now the engine has a very nice torque curve. Needs very little throttle to get it going and keep it going. It pulls hills with ease. You won't be disappointed.

May be fake dyno but the torque curve looked good to me.

Besides, you'll be running more in the 1000 - 3000 rpm range than 4000 and higher unless you're racing it.

No, they suck, but if it's what you got, it's what you got. I ran them on my 406 for years. Still on it now, that guy's down in Atlanta doing burnouts happy as a pig in ****.

I'd like to get a pair of these, plenty of room for plenty of valve lift...

Buyer beware...
I believe these are cheap import casting and parts. For sure at the very least they need to be leak tested and valve stem clearance.
Check surface for true.
I'm just saying don't think buy and run 'em... you or better yet your builder needs to go through everything.
