For really beatup rigs, some guys use 1/4"-3/8" wall rectangle tube to replace the rocker in its entirety. http://www.4x4-16.com/rock-sliders-for-a-74-k10-help_10259888.html
You can do boatsides which is plating the rockers, but its angled in a lot more to have better clearances. http://offroaddesign.com/willard.htm
You can build sliders, but kind of hard to do with the saddle tanks.
This guy: @kevinmaraschin plated the outside of the cab up to the body line to help strengthen it.
