Fluid pan should be parallel with the ground IMO

Just like the middle diagram above.
Then if it’s a 2 piece shaft, shim the carrier bearing if necessary to keep both pieces parallel in the condition it’s driven the most. (Loaded or unloaded)

My preference for a starting point is the carb mounting pad.

Lol, you would hate the angle of the pan in the company's bale moving rig. That 6-spd Allison's pan is at one heck of a downward angle. It makes it look as if the engine and trans are falling out.

3 degrees. Same as the carb mounting surface. Then adjust the rear pinion to match. They will be offset but parallel. Unless you have a two piece shaft, then it's a different setup.

Nice swap. I am quietly jealous.

The driveshaft should have both yokes at the same approach angles. Period.

The driveshaft at straight through is not recommended.
Reason? The universal joints are designed to move enough for the needle bearings to cycle a set amount - some manufacturers prefer the needles rotate at least 30% (though I wonder at the number they derived.) A straight-through is prone to vibration and droning if the driveshaft is not balanced well.

When I was at the dealer, it was noted even Corvettes with a solid-mounted differential and independent rear suspension had slight angles in the driveline.
