For the oil pressure gauge, you can get a 16mm to 1/8npt fitting to go in the stock Ls oil sender location. You can then use a brass Tee and a stock 87' oil pressure sender (get the 1/8" version).

I am curious as to why the moved it for the last few years. Did it offer better reception, or was it due to GMT400 having the fender mounted antenna and using the same stock, or something along those lines?
The mounts you bought bolt to the frame stands. The V6 and V8 frame stands are different, so you will need V8 frame stands to bolt up the dirty dingo mounts.
Dirty Dingo and Tejas Steelworks make some nice mounts. Tejas Steelworks sets the engine forward about 3 inches, which would require you to run electric fans, but allows you to retain the factory AC compressor with minimal to zero notching of the frame, if you are worried about that.

You can't convert the TH350C into a regular TH350 as the cases are different, I believe.
However, you can replace your TH350C with a TH350 with no problems. You would just leave the TCC Connector unplugged.
