I hate the power window and door lock switches
Just looking at Summit again and I found these that might work great for a 2 door and kick the switches out at an angle instead of being flat againsyt the door panel. The cost is not bad but do not know any other specs on them. Just a thought for you but would need to cut the OEM connector off... -

Which headers to buy?
There are so many out there, the flow tech listed above in the link are good from what I hear. It all depends on what you want to spend. The best ones I ever had were Doug Thorley Tri Y's but they cost a lot more than the flow tech headers.- 87gmcburb

I just converted my 87 from TBI to carb and using the same carb (AVS2) at 4 psi with an air gap manifold. I have used basically the same set up on my last few burbs as well and even warm I still give it a pump or 2 when re-starting. Just the nature of a carb vs TBI. Color blind! Burgundy or Maroon?
You should have the GM color code on your tag in the glove box. Yes it looks Burgundy, the code should be 77D for an '87 -
Trim codes 77B and 77I
It looks like you have the exact color package as my 87 burb. You have 77D interior which is Burgundy and 72U exterior which is 72 apple red (I have 90 Steel as the 2 tone lower color). Many time you can find the color marked on the backside of the velour door panel insert or even the backside... -

Door Seal to big

Name brand or budget carb?
Some don't like Edelbrock, but my last 3 burbs as well as my current 87 which i just swapped from TBI to carb, I have had much better luck with edelbrock than the Q jet or holley's. I just put a Edelbrock QVS2 and so far it is the best set up on a carb 350 yet. There are generic Q Jets out there...- 87gmcburb

Remove accessories from this old truck?
I had the same running boards, I pulled them off the first weekend I got the truck. They are "butt ugly: in my opinion. :) Same goes with the bug shield. Just because something was in style in the 80s does not make it look good today- 87gmcburb

This is an old Hygrometer to measure humidity I have a large box of Mercury items like this at my work we have rounded up for disposal. Even have 2 large unopened bottles of laboratory grade mercury. -

I am a bit old school I guess I prefer a good carb over TBI plus I hate all of the smog junk and removing most of them does not work well with running the stock TBI. I left the CPU and harness in the truck in case I ever go back or sell it to someone who wants to go back to TBI -

I see you are using the edelbrock AVS, I just converted my 87 TBI to carb and using the same setup with an edelbroock air gap manifold. Which of the 2 front small vacuum ports did you use for your dist. vacuum advance? Did you use one for the charcoal canister as well? I see your 3/8 port in... -
Vacuum Reservoir
If you are going away from vacuum actuated HVAC controls and actuators I would say you do not need it but see attached PDF Vacuum diagram. This one is for an 87 with TBI.- 87gmcburb

Thermal switch on thermostat housing for Qjet Carb (1986 K5 Blazer 350)
Here is an OEM on Ebay, connection is a stud vs blade connector. This is the same sensor I had on my 84 burb. Not sure what year they changed the Sensor to a 2 wire connection. Hope this helps 83 84 85 86 87 GM ACDELCO ENGINE TEMPERATURE SENSOR SWITCH 25036568 OEM NOS- 87gmcburb
